Happy Friday everyone! It looks like this weekend will be a beautiful and, mostly, oil free one here on our section of the Emerald Coast. This weeks recipe is a dessert a friend of mine fixed for her Memorial Day BBQ. It was the perfect sweet, yet light, end to a meal served on her back patio during sunset. If you have weekend plans, this angel food toffee cake is a somewhat homemade treat that can easily be made before heading out to the beach or jumping on the boat for a fun-filled day with friends and family.
What you need:
2 cups whipping cream
1/2 cup caramel or butterscotch ice cream topping
1/2 tsp. vanilla extract
1 prepared angel food cake
9 Heath candy bars (crushed)
What to do:
In a mixing bowl, beat the whipping cream until it begins to thicken. Gradually stir in the topping and vanilla extract; beat until soft peaks form. Cut cake horizontally into 3 layers and place the bottom layer on a serving platter. Spread layer with 1 cup cream mixture and sprinkle with 1/3 cup crushed candy. Repeat process while stacking each layer. Once cake is stacked, frost the top and sides with cream mixture and sprinkle with the remaining candy. Store the cake in the refrigerator until you're ready to enjoy!
